British-inspired amber rum made from organic cane sugar and molasses. Each batch is a blend of selected one to three-year-old barrels from our cellar.
What’s in It: This rum is distilled twice and aged in bourbon barrels to give it a pleasant texture and flavours of exotic fruits, caramel and spices. No sugar or colouring is added before it is filtered and bottled, in order to give you the most authentic expression of this rum entirely made in Quebec City.
A Bit of History: This rum is a tribute to the Quebec City St-Roc Distillery founded in the 18th century, which marked the birth of the distilling industry in Canada.
Tasting Notes:
Appearance: Golden
Nose: Seducing nose with fruitcake, raw sugar aromas on a woody background reminiscent of a campfire. We recognize yellow fruits with even an exotic note. Scents of honey and white flowers are combined with a herbaceous touch.
Palate: The texture is soft and the taste power is well balanced, caramel notes with a touch of gingerbread and leather.
Finale: The finale stretches for our pleasure with tasty toasted notes.
How to enjoy it: For those who like to savour dry rums in their simplest form, pour and let stand for a few minutes in a glass to allow aromas to develop fully. When a cocktail is in order, the St-Roc Fondation in a Mojito or a Pineapple Fizz will surely please your guests!
